This study was conducted to investigate changes in the quality of Gochujang following the addition of sea tangle Saccharina japonica powder fermented by lactic acid bacteria (FSP). Gochujang was prepared with or without FSP and fermented at 16℃ for 24 weeks, as detailed in a previous study. No significant physicochemical changes in moisture, crude protein content, pH, salinity and amino nitrogen content were observed among the varieties of Gochujangs evaluated (Commercial Gochujang, Gallic-Gochujang and FSP-Gochujang). In addition, we detected no significant differences in microbiological profiles. However, following addition of FSP to Gochujang, the color was affected and antioxidant properties were enhanced. The DPPH radical scavenging activity of FSP-Gochujang increased by 58.8% and 24.8% compared with Commercial Gochujang and Gallic-Gochujang, respectively. Furthermore, analysis of the free amino acid content revealed higher levels of γ-aminobutyric acid (100.9 mg/100 g), a biofunctional ingredient, in FSP-Gochujang. Thus, these results suggest the potential for development of a traditional Korean fermented food with enhanced antioxidant activity and γ-aminobutyric acid content using FSP.

Various types of dried laver Pyropia yezoensis have been produced in response to increasing demand and other laver goods manufactured using different processing methods are continuously being developed. The dried laver used in this experiment was initially heated at 165℃ for 3 seconds, followed by second heating at a high temperature (340- 350℃) to increase the storage period and enhance taste and flavor. Nutrient analysis of each sample heated under three conditions revealed that the protein and lipid contents were highest in samples from D company, while the carbohydrate contents remained relatively stable. After storage for 10 weeks at room temperature, changes in the composition were evaluated. The results showed decrease in protein (30%-49%) and essential amino acid contents. During storage, the major unsaturated fatty acids contained in dried laver slightly changed to 53.4%-56.0% in the form of EPA, while saturated fatty acids slightly increased to 18.4%-22.6% in the form of palmitic acid. The variables derived from fatty acid composition, such as atherogenic and thrombogenic, and hypocholesterolemic/hypercholes-terolemic dietary indices, and polyunsaturated fatty acids/saturated fatty acids ratio, also indicated reasonable levels of stability. However, the laver should be consumed within 2 months.

This study investigated the food and nutritional characteristics of alkaline-insoluble fractions (AIFs) recovered from bastard halibut Paralichthys olivaceus (BH) and skipjack tuna Katsuwonus pelamis (ST) roes using the alkaline solubilization. The moisture content of AIFs ranged from 4.8% to 12.8%, and ST provided significantly better yields (9.5 for STAIF-11 and 7.1 g/100 g roe for STAIF-12) than did BH (P<0.05). The protein content of AIFs ranged from 71.7% to 79.2%, with the highest level yielded by STAIF-11 (6.8 g/100 g roe). The crude fat content of AIFs was 10.9-14.3% and the mineral content was 0.7-3.4%. The major mineral components of AIFs were sulfur, sodium, potassium, and phosphorus. Color values showed that BHAIFs were significantly brighter than STAIFs. Total contents of essential amino acids were significantly higher in STAIFs (47.5-49.5%) than in BHAIFs. The major essential amino acids found in AIFs from both sources were Val, Leu, Lys, and Arg. Therefore, AIFs were significantly superior to whole BH roe in terms of physicochemical and nutritional status, and we identified species-specific differences between BH and ST. Protein is a major component of AIFs recovered from fish roes, which suggests that they have potential for use as a protein source.

This study investigated survival rates and physiological responses in Pacific abalone (Haliotis discus hannai) to 18 days of containment in live fish containers (8℃, 34 psu). The investigation was divided into three periods: before, during, and recovery after transportation. The overall survival rate was greater than 99%. Glucose, aspartate aminotransferase (AST) and alanine aminotransferase (ALT) rose immediately on the first day of containment, but then gradually returned to normal levels. NH3 continued to rise after the first day, but during the recovery period it decreased to a level not significantly different from that of the control group. Na+ and osmolality did not show any abnormal changes. After recovery, superoxide dismutase (SOD) was not significantly different from control. Abalone in the experimental group had lower glutathione reductase (GR) than control. The hyalinocyte ratio fell immediately after confinement, but then gradually increased until it reached a normal level. The ratios of apoptotic and necrotic cells indicated no specific variations in hemocyte viability. Histological changes in the epidermal layer and muscle layer of the foot were not significantly different from those seen in the control group. The experimental data obtained in this study suggest that live fish containers may be used for transport of Pacific abalone withouts ignificantly impacting their physiology or survival rates.

Freshwater farms are primarily located adjacent to rivers and lakes, facilitating the introduction and spread of pathogens into natural systems. Therefore, it is necessary to continuously monitor natural aquatic organisms, the breeding environment, and infection rates by pathogenic organisms. Fish and crustaceans were sampled 4 times in the Geum River estuary in 2016. The samples were analyzed for the presence of pathogens for reportable communicable diseases, including KHVD (koi herpesvirus disease), SVC (spring viraemia of carp), EUS (epizootic ulcerative syndrome) and WSD (white spot disease); parasite abundance was also examined. The dominant fish species were deep body bitterling Acanthorhodes macropterus (21.4%), followed by skygager Erythroculter erythropterus (12.7%). For crustaceans, Palaemon paucidens and Chinese mitten crab Eriocheir sinensis were dominant. Sixty fish and 36 crustacean species were examined for reportable communicable diseases. When using a specific primer set for each disease, PCR analysis did not detect any reportable communicable diseases in the samples. Some instances of Dactylogyrus, copepods, nematodes and metacercaria were detected. However, the PCR results indicated that the metacercaria were not Clonorchis sinensis.

From 2014 to 2017, mortalities of seawater-cultured rainbow trout Oncorhynchus mykiss, were observed in the Goheung and Jeju areas of Korea, with Vibrio anguillarum (seven strains: RT1, 2, 3, 4, 5, 6, and 7) identified as the etiological agent. The phenotypic (based on API 20NE, API ZYM, and E-test kits), serotypic (slide agglutination tests with O1, O2, O3, O4, and O7 antisera), and genotypic (16S rRNA and ompU sequencing) characteristics of the seven RT strains were analyzed and compared to those of seven additional V. anguillarum stains (SF, isolated from sweet fish; FM, isolated from flathead mullet; ATCC43305; ATCC43311; ATCC43307; ATCC43308; and KCTC2711). The phenotypes of the RT strains showed variance, while the slide agglutination tests of the RT1-7, SF, and FM strains all showed positive reactions with serotype O1 antiserum. The 16S rRNA and ompU sequences of the RT1-7, SF, and FM strains were affiliated with V. anguillarum ATCC43305 (Serotype O1), but the ompU sequence of the SF strain differed from those of the RT1-7, FM, and ATCC43311 strains, including one amino acid substitution. We thus confirmed that serotype O1 V. anguillarum, with multiple phenotypes, continues to infect seawater-cultured rainbow trout in Korea.

We seasonally examined marine macroalgal community structures and ocean environmental characteristics in subtidal zones at five sites on and around Jeju Island, Korea, from February 2013 to November 2015. A total of 186 macroalgal species were identified, including 18 green, 33 brown, and 135 red algae. During the study period, the number of species was highest at Gapado Island (125 species) followed by Bukchon (123 species), Sagye (122 species), Sinheung (122 species) and Sinchang (97 species). Ecklonia cava, Peyssonnelia caulifera, Synarthrophyton chejuense, Corallina aberrans and Corallina crassisima occurred at all study sites and in all seasons. The average annual biomass of seaweed was 1,125.10 g wet wt./㎡ and ranged from 899.77 g/㎡ at Sinheung to 1,452.00 g/㎡ at Gapado. A brown alga E. cava was the most dominant species, accounting for 49.84% (560.78 g/㎡) of the total seaweed biomass. Subdominant species were C. aberrans and C. crassissima, comprising 6.83% (76.79 g/㎡) and 5.98% (67.28 g/㎡) of total biomass, respectively. Cluster analysis revealed three distinct groups: the Sagye/Sinheung group (group A), the Bukchon/Sinchang group (group B), and the Gapado group (group C), indicating significantdifferences in macroalgal communities between sites.

Monthly variation in species composition of fishes in the eelgrass bed of Jangpyeong in Tongyeong, Korea was determined using monthly samples from a seine net from May 2016 to April 2017. A total of 32 species, 2,042 individuals and 3,991.1 g of fishes were collected during the study period. The dominant species were Takifugu niphobles, Rudarius ercodes, Gymnogobius heptacanthus, Zoarchias glaber, Pholis nebulosi and Leucopsarion petersii. These species accounted for 79.5% of the total number of individuals. The fish assemblages in the eelgrass bed showed clear seasonal changes: the number of fish species increased in March and was highest in October, while the number of individuals increased in December and was highest in July.

We analyzed scientific observer data to identify species composition and catch trends of Korean tuna longline fisheries in the Indian Ocean. The data were collected by Korean scientific observers onboard Korean tuna longline fishing vessels in the Indian Ocean from 2010 to 2015. The observers identified 94 species including 5 tuna, 6 billfish, 11 shark, 7 other fish, 5 seabird and 1 sea turtle. Albacore tuna Thunnus alalunga and southern bluefin tuna Thunnus maccoyii were the dominant tuna species, and swordfish Xiphias gladius were the most commonly captured billfish. During the survey periods, 87 seabirds were incidentally bycaught. Black-browed albatross Diomedea melanophris was the dominant seabird species in bycatch, especially in 2010. Cluster analysis showed difference in the species composition of catches between the eastern and western Indian Ocean.

A single specimen of Gymnothorax pseudothyrsoideus (424.0 mm TL) belonging to the family Muraenidae, order Anguilliformes, was collected from Jeju Island, Korea, for the first time. The specimen is characterized by jaws closing completely, canine teeth on jaws, teeth not exposed when mouth is closed, ovoid posterior nostril, and body color ranging from yellowish brown to brownish with small dark spots aggregating to form larger spots that from approximately four irregular rows along the body. A comparison of mitochondrial DNA 16S rRNA sequences indicated that this specimen corresponds well with G. pseudothyrsoideus (K2P distance, d=0.002) but differs from other Gymnothorax species (11.9-13.7%). Therefore, the new Korean name “Geu-mul-nun-gom-chi” is proposed for the species G. pseudothyrsoideus.
